Prickly Pear Syrup: Part II

Sorry I’m so late on the follow-up to the prickly pear syrup. So, here’s one of my favorite things to do with it. Prickly pear margaritas! Salt your rim, put your ice and tequila in. Pour in about 1/4 cup syrup (more or less, depending on how sweet – and pink – you like it), and top off with fresh squeezed lime. It’s yummy. If you’re not a boozer, I highly recommend it with lemonade. It’s so good and the colors are just gorgeous together!
